Peach gelatin and candies mixed with cake mix create an easy and delicious peach cake.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and whole eggs called for on cake mix box
  • 1 box (4-serving size) Jell-O™ peach-flavored gelatin
  • 1 box (4-serving size) peach-flavored gelatin
  • 1/4 cup water
  • 4 1/2 cups powdered sugar
  • 1/2 cup butter or margarine, softened
  • 2 teaspoons lemon juice
  • 2 to 3 teaspoons water
  • Red and yellow liquid food colors
  • 1 teaspoon granulated sugar
  • 12 sour peach gummy candy rings, if desired
Instructions:
  • 1. Preheat the oven to 350°F (325°F for dark or nonstick pans). Grease and lightly flour two 8- or 9-inch round cake pans. 2. In a large bowl, use an electric mixer to beat the cake ingredients on low speed for 30 seconds and then on medium speed for 2 minutes. 3. Divide the batter evenly between the two pans.
  • Bake 8-inch rounds for 32-37 minutes or 9-inch rounds for 28-33 minutes, until a toothpick inserted in the center comes out clean. Let them cool for 10 minutes, then run a knife around the sides to loosen the cakes and transfer them to a cooling rack. Allow them to cool completely for about 1 hour.
  • In a 2-cup microwave-safe bowl or measuring cup, combine 1 box of gelatin with 1/4 cup water. Microwave uncovered on High for about 1 minute and 30 seconds, or until it boils, stirring 2 to 3 times to dissolve the gelatin. In a large bowl, mix the gelatin mixture with powdered sugar, butter, lemon juice, and 2 teaspoons water on low speed until the frosting is thick and spreadable. Add an additional teaspoon of water if needed to achieve the desired consistency.
  • Place the first cake on a serving plate with the rounded side down. Spread 1/2 cup of frosting over the cake. Add 2 drops of red food color and 1 drop of yellow food color to the frosting on the cake; swirl with a spatula to create a deep orange color. Place the second cake on top with the rounded side up. Set aside 1/2 cup of frosting. Frost the sides and top of the cake with the rest of the frosting. Mix 1 or 2 drops of red and yellow food colors into the reserved frosting and swirl it around the cake. Sprinkle granulated sugar on top and decorate with peach candies. Cut the cake gently with a serrated knife and store it loosely covered.
