Irresistible coffee cake with fresh peaches – a year-round treat! For extra sweetness, add 1/2 cup brown sugar with fresh peaches.
Ingredients:
  • 1 (29 ounce) can sliced peaches, drained and chopped
  • 0.25 cup brown sugar
  • 0.5 tablespoon cornstarch
  • 3 tablespoons vegetable oil
  • 1.5 cups all-purpose flour
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 2 lemons, zested
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 0.5 cup vegetable oil
  • 0.5 cup orange juice
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and lightly grease an 8x8 inch baking pan.
  • Combine peaches, brown sugar, cornstarch, and 3 tablespoons of vegetable oil in a saucepan over low heat. Stir and cook until the sugar is melted and the mixture is slightly thickened.
  • Combine flour, sugar, baking powder, and lemon zest in a large bowl. Add eggs, vanilla, 1/2 cup oil, and orange juice, then mix until smooth. Pour half of the batter into the pan, layer with half of the peaches, add the rest of the batter, and top with the remaining peaches.
  • Bake in a preheated oven for 45 minutes, or until a knife inserted in the center comes out clean.
