Ingredients:
  • 825g can sliced peaches in natural juice, drained
  • 62.50 ml plain flour
  • 53.75 gm caster sugar
  • 2 eggs, lightly beaten
  • 128.75 gm skim milk
  • 126.25 gm thickened light cream
  • 4.40 gm vanilla extract
  • pure icing sugar, to serve
Instructions:
  • Preheat your oven to 180°C and lightly grease four 1-cup capacity ovenproof ramekins. Divide the peaches evenly between the ramekins.
  • In a bowl, mix together the flour and sugar. In another bowl, whisk the eggs, milk, cream, and vanilla. Pour the egg mixture into the flour mixture and whisk until smooth.
  • Pour the mixture evenly over the peaches in the ramekins. Place them on a baking tray and bake for 25 to 30 minutes until just set. Let them stand for 5 minutes, then dust with icing sugar before serving.
