Tangy peach gravy perfect for pork roast, made with drippings and fresh peaches.
Ingredients:
  • 2 cups fresh peaches - peeled, pitted, and diced
  • 2 cups dry white wine
  • 4 tablespoons roast drippings
  • 0.5 cup white sugar
  • 4 tablespoons rice wine vinegar
  • 0.25 teaspoon dried thyme
  • 1 tablespoon coarse-grain mustard
  • salt and ground black pepper to taste
Instructions:
  • In a saucepan, simmer peaches, white wine, roast drippings, sugar, rice wine vinegar, and thyme until the sauce thickens, about 30 minutes. Remove from heat when done.
  • Combine mustard with a pinch of salt and pepper, then blend the sauce until smooth using a stick blender.
