Peach Upside-Down Cake: Dense crust with peach slices, perfect with vanilla ice cream.
Ingredients:
  • 0.5 cup margarine
  • 1 cup all-purpose flour
  • 1 (29 ounce) can sliced peaches, drained
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 350 degrees F (175 degrees C), and prep a 9-inch springform pan by greasing and flouring it. In a separate bowl, sift together the flour, baking powder, and salt, then set it aside.
  • Cream the butter and sugar in a large bowl until light and fluffy. Add the egg and vanilla, mix well. Beat in the flour mixture. Press the dough with your hands onto the bottom and 1 inch up the sides of the springform pan. Arrange peach slices in a spoke pattern on top of the dough, then sprinkle with sugar and cinnamon.
  • Place in the hot oven and bake for 35-40 minutes, or until beautifully golden.
