Ingredients:
  • 250g mascarpone
  • 2 large yellow peaches, wedges
  • 8 shortbread rounds (good quality)
  • 6.00 gm icing sugar
  • 4.40 gm vanilla extract
Instructions:
  • Mix creamy mascarpone cheese with sweet icing sugar and aromatic vanilla extract in a bowl.
  • Spread the mascarpone mixture on shortbread rounds. Add peach wedges and another shortbread round on top. Dust with extra icing sugar before serving.
