Create delicious peach-ginger shortcakes using Bisquick™ mix, filled with a luscious peach-ginger filling and topped with whipped cream.
Ingredients:
  • 3 cups sliced peeled peaches
  • 1/4 teaspoon ground ginger
  • 2 1/2 cups Original Bisquick™ mix
  • 1/4 cup granulated sugar
  • 3 tablespoons chopped crystallized ginger
  • 1/2 cup half-and-half
  • 1/4 cup butter or margarine, melted
  • 3/4 cup whipping cream
  • 4 1/2 teaspoons granulated sugar
  • 3/4 teaspoon vanilla
Instructions:
  • In a medium bowl, delicately mix together peaches, brown sugar, and ground ginger until evenly coated. Allow the mixture to sit for 30 minutes or until it becomes syrupy.
  • Preheat the oven to 425°F. Combine Bisquick mix, 1/4 cup granulated sugar, crystallized ginger, half-and-half, and melted butter in a large bowl until a soft dough forms. Spoon 6 dough portions onto an ungreased cookie sheet.
  • Bake until golden brown, then cool for 15 minutes.
  • In a chilled medium bowl, use an electric mixer on low speed to beat the sweetened whipped cream ingredients until slightly thickened. Increase speed to high and beat until soft peaks form.
  • To present, gently cut warm shortcakes in half and arrange on dessert plates. Generously fill and crown with peach mixture and a dollop of whipped cream.
