Peach Upside-Down Cake on the Grill

Grilled peach upside-down cake with a hint of smokiness, using ripe peaches caramelized beautifully.
Ingredients:
  • 1 tablespoon butter
  • 2 tablespoons packed dark brown sugar
  • 2 cups sliced fresh peaches (3 to 4 medium)
  • 1/2 cup granulated sugar
  • 1/3 cup milk, at room temperature
  • 1/3 cup plus 2 tablespoons canola oil
  • 1 egg, at room temperature
  • 1 cup Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Instructions:
  • Preheat charcoal grill. Grease the bottom of an 8-inch square pan with butter, then sprinkle brown sugar evenly over the bottom. Arrange peaches in a single layer on top of the brown sugar.
  • Combine granulated sugar, milk, oil, vanilla, and egg in a large bowl, stirring until sugar is fully dissolved. Mix in flour, baking powder, and salt until fully incorporated.
  • Cover the peaches in the pan with batter, making sure they are fully coated, then use a spatula or the back of a spoon to smooth the top.
  • Fill an 8-inch square foil pan halfway with water and place it in the bottom of the grill surrounded by hot coals. Place the grill rack on top and position the cake pan directly over the water pan to cook the cake evenly using indirect heat.
  • Preheat grill, leaving vents open. Bake cake for 40 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely on a rack for about 45 minutes.
  • Using a thin knife, gently loosen the cake from the edges of the pan. Place a serving plate upside down on top of the pan, then flip them over together. Remove the pan to reveal the cake on the plate.
