Indulgent nut bread pudding with warm sauce and whipped cream - a quick and satisfying dessert!
Ingredients:
  • 4 cups soft bread cubes (4 to 5 slices bread)
  • 1/2 cup coarsely broken peanut brittle
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup packed brown sugar
  • 1/4 cup butter or margarine, melted
  • 1/2 cup butter or margarine, softened
  • 2/3 cup whipping (heavy) cream
  • 1/4 cup rum or 3 tablespoons water plus 2 teaspoons rum extract
  • Whipped cream, if desired
Instructions:
  • Preheat oven to 350°F. Grease a 1-quart casserole dish with shortening or cooking spray. Layer 2 cups of bread cubes in the casserole, then sprinkle half of the peanut brittle. Repeat with the remaining bread cubes and peanut brittle.
  • In a small bowl, whisk together an egg, milk, 1/2 cup of brown sugar, and 1/4 cup of butter until smooth. Drizzle this delightful mixture over the bread mixture.
  • Bake until beautifully golden brown, uncovered, for 25-30 minutes.
  • In a 2-quart saucepan, combine all sauce ingredients and bring to a boil over high heat, stirring constantly. Cook for 3 to 4 minutes until slightly thickened. Serve warm sauce with bread pudding and whipped cream. Store any leftover sauce covered in the refrigerator for up to 1 week. Remember to give it a quick stir before serving if it separates.
