Create a classic spring treat that will fly off the shelves at any gathering!
Ingredients:
  • 1000.00 ml unsalted roasted peanuts
  • 860.00 gm caster sugar
  • 150g butter, chopped
Instructions:
  • Grease two 18cm x 28cm slice pans and line them with baking paper, leaving a 2cm overhang on all sides. Spread 2 cups of peanuts evenly in each pan.
  • In a large heavy-based saucepan, gently melt sugar in 2 cups of cold water over medium-low heat, stirring occasionally until sugar dissolves. Increase heat to medium-high and bring to a boil. Boil for 10-15 minutes until the mixture turns golden, brushing the sides of the pan with a wet pastry brush. Remove from heat.
  • Add butter promptly and stir vigorously. Pour the mixture evenly over peanuts in pans. Lightly tap pans on the counter. Allow it to set for 3 hours or until solid. Use a mallet or the back of a large metal spoon to break the brittle into pieces.
