Try this addictively delicious peanut brittle recipe - a perfect sweet and salty treat made with sugar, water, and peanuts.
Ingredients:
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon water
  • 1 teaspoon vanilla
  • 1 1/2 cups sugar
  • 1 cup water
  • 1 cup light corn syrup
  • 3 tablespoons butter
  • 1 pound shelled unroasted peanuts
Instructions:
  • Preheat the oven to 200°F. Grease two 15 1/2x12 inch cookie sheets with butter and keep them warm in the oven. Combine baking soda, 1 teaspoon water, and vanilla; set aside.
  • In a 3-quart saucepan, combine sugar, 1 cup of water, and corn syrup. Cook over medium heat, occasionally stirring, until it reaches 240°F on a candy thermometer, or until a small amount of the syrup dropped into very cold water forms a soft ball that flattens when removed from the water.
  • Combine butter and peanuts in the saucepan. Cook over medium heat, stirring constantly, until the mixture reaches 300°F or until a small amount dropped into very cold water forms hard, brittle threads. Be vigilant to avoid burning. Remove from heat promptly. Stir in baking soda mixture swiftly until light and foamy.
  • Divide the candy mixture evenly between the two cookie sheets and swiftly spread it out to a thickness of about 1/4 inch. Allow it to cool completely for at least 1 hour. Once cooled, break it into pieces and store in a covered container.
