Peanut butter and pecan biscuits

Indulge in easy-to-make peanut butter pecan biscuits.
Ingredients:
  • 125g butter, chopped, at room temperature
  • 130.00 gm crunchy peanut butter
  • 180.00 gm brown sugar
  • 1 egg
  • 4.40 gm vanilla extract
  • 225.00 gm self-raising flour, sifted
  • 250.00 ml pecans, chopped
Instructions:
  • Preheat your oven to 180C. Gently grease 2 baking trays and line them with baking paper.
  • In a large bowl, cream together the butter and peanut butter until smooth. Add sugar, egg, and vanilla, and mix until fluffy. Gently fold in the flour and pecans until well combined.
  • Form level tablespoonfuls of the mixture into round balls, arranging them on the prepared trays with a 4cm space between each one. Gently press down to slightly flatten.
  • Bake for 12-15 minutes until golden. Cool on trays for 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container.
