Decadent brownies with dark and milk chocolate, pecans, peanut butter, and caramel sauce for an irresistibly rich treat.
Ingredients:
  • 250g salt-reduced butter, chopped
  • 2 (x 180g) blocks dark chocolate, chopped
  • 215.00 gm caster sugar
  • 3 eggs, lightly beaten
  • 500.00 ml plain flour
  • 250.00 ml pecans, roughly chopped
  • 1/2 (x 220g) block milk chocolate, broken into pieces
  • 41.60 gm crunchy peanut butter
  • 1/2 (x 180g) block dark chocolate, roughly chopped, extra
  • 62.50 ml caramel spread
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease an 18cm x 28cm slice pan and line the base and sides with baking paper, leaving a 2cm overhang.
  • In a saucepan over medium heat, melt butter and dark chocolate together, stirring constantly until smooth and well combined. Let it cool for 10 minutes.
  • Combine sugars, egg, and flour until well mixed. Add pecans and incorporate. Transfer mixture into the pan, smoothing the top with a spatula. Press in pieces of milk chocolate. Drop small amounts of peanut butter over the top and gently press into the chocolate mixture.
  • Bake for 40 to 45 minutes until slice is gently firm to touch, then allow to cool entirely in the pan.
  • In a small microwave-safe bowl, melt the extra dark chocolate in the microwave on HIGH for 1 minute, stirring halfway through, until melted. Drizzle the top of the slice with caramel and dark chocolate. Let it sit for 30 minutes to allow the chocolate to set. Cut into squares and serve.
