Fluffy peanut butter pancakes with banana, drizzled with maple syrup and topped with fresh strawberries.
Ingredients:
  • 1.5 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 tablespoon white sugar
  • 1.25 cups milk
  • 1 ripe banana, mashed
  • 0.33333334326744 cup smooth peanut butter
  • 1 tablespoon canola oil
Instructions:
  • Warm up the griddle over medium heat.
  • In a large bowl, mix together flour, baking powder, sugar, and salt. In a separate bowl, combine milk, mashed banana, peanut butter, egg, oil, and vanilla. Pour the wet ingredients into the dry ingredients and whisk until well combined.
  • Pour 1/4 cup of batter onto the hot griddle. Cook until small air bubbles form on the surface, about 2 to 5 minutes. Flip and cook until golden brown on the bottom, for about 2 to 3 minutes. Transfer pancakes to a plate, cover to keep warm, and repeat with the rest of the batter.
