Irresistible whole wheat peanut butter banana pancakes with maple syrup and dark chocolate chips - no white flour needed!
Ingredients:
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 0.5 cup dark chocolate chips
  • 2 large eggs
  • 2 medium ripe bananas
  • 1 cup milk
  • 3 tablespoons smooth peanut butter
  • 2 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, or as needed
Instructions:
  • Preheat griddle over medium-low heat as per manufacturer's guidelines.
  • Combine the flour, baking powder, and salt in a large bowl, then gently fold in the chocolate chips.
  • In a medium bowl, whisk together eggs. Then, add bananas and mash them with a fork. Mix in milk, peanut butter, syrup, and vanilla until combined. Gently fold wet ingredients into dry ingredients, being careful not to overmix.
  • Grease the warm griddle with butter. Spoon batter onto the griddle, cooking until bubbles form and edges are dry, about 3 to 4 minutes. Flip and cook until browned, around 2 to 3 minutes. Repeat with remaining batter.
