Caramel peanut apples for a spooktacular Halloween treat!
Ingredients:
  • 10 small apples
  • 10 craft sticks (flat wooden sticks with round ends)
  • 2 cups sugar
  • 3/4 cup water
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 tablespoon shortening
  • 1 cup chopped honey-roasted peanuts
Instructions:
  • Prepare the cookie sheet by lining it with waxed paper and then spraying the paper with cooking spray. Wash and dry the apples, then remove the stem and blossom ends. Insert a craft stick into the stem end of each apple.
  • Combine sugar, water, and 1/4 cup of corn syrup in a 2-quart saucepan. Bring to a boil over medium-high heat. Cook without stirring for about 8 minutes until it reaches 300°F on a candy thermometer or forms brittle threads in cold water. Be vigilant to avoid burning. Remove from heat promptly.
  • Quickly coat each apple with the sweet sugar mixture, then arrange them neatly on a baking sheet and allow them to rest for 4 minutes.
  • In a double boiler, combine 3/4 cup corn syrup, peanut butter, and shortening. Cook over simmering water for about 4 minutes, stirring constantly until smooth. Dip apples in peanut butter mixture, then roll them in chopped peanuts and refrigerate until set. Store covered at room temperature.
