Discover the surprisingly tasty combination of beans and peanut butter in this hearty vegetarian chili.
Ingredients:
  • 1 (14.5 ounce) can diced tomatoes
  • 0.5 cup water
  • 2 bay leaves
  • 0.5 teaspoon cayenne pepper, or to taste
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 0.33333334326744 cup creamy peanut butter
  • salt and pepper to taste
  • 1 cup shredded Cheddar cheese
  • 2 cups tortilla chips
Instructions:
  • In a saucepan, combine diced tomatoes, water, garlic, and bay leaves. Bring to a simmer over high heat. Then, lower the heat to medium-low and add cayenne pepper, chili powder, garlic powder, and Italian seasoning. Cover and simmer for 15 minutes.
  • After 15 minutes, add the black beans and kidney beans to the pot. Allow it to simmer for an additional 5 minutes. Stir in the peanut butter until fully dissolved. Remove and discard the bay leaves, then season the chili with salt and pepper to taste. Serve with a sprinkle of Cheddar cheese, tortilla chips, and a smile!
