Easily make irresistible chocolate truffles using peanut butter cookies.
Ingredients:
  • 1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
  • Water, vegetable oil and egg called for on cookie mix package
  • 4 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 2 cups semisweet chocolate chips
  • 2 tablespoons shortening
  • 1/4 cup finely chopped cocktail peanuts
Instructions:
  • Preheat oven to 375°F. Follow instructions on the cookie pouch to bake. Allow to cool completely for at least 15 minutes.
  • Start by finely processing half of the cookies in a food processor, then set them aside. Proceed to process the remaining cookies until finely crumbled. Combine all of the cookie crumbs in the food processor. Add cream cheese and peanut butter, then process until well combined and can be molded into a ball in about 1 to 2 minutes. Shape the mixture into 48 (1 1/4-inch) balls and place them on a cookie sheet lined with waxed paper. Refrigerate for 15 minutes.
  • In a medium bowl, microwave the chocolate chips and shortening uncovered on High for 60 to 90 seconds until smooth, stirring occasionally.
  • With 2 forks, coat each chilled cookie ball in melted chocolate and sprinkle chopped peanuts on top. If the chocolate cools, warm it up again. Chill the truffles for about 10 minutes until the chocolate sets. Keep refrigerated with a cover.
