Easy and delightful peanut butter cookie cups with a hidden Reese's peanut butter cup inside. Baked in mini muffin tins for a fun twist, they can be enjoyed on their own or dressed up with ice cream, chocolate sauce, and peanut butter sauce for a decadent dessert.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 1/3 cup creamy peanut butter
  • 1/4 cup butter or margarine, softened
  • 1 egg
  • 2 tablespoons whipping cream
  • 1/4 cup chopped unsalted peanuts
  • 1 bag (12 oz) Reese's peanut butter cups miniatures, unwrapped
Instructions:
  • Preheat oven to 350°F. Grease 36 mini muffin cups with shortening or cooking spray.
  • Combine flour, baking soda, and salt in a small bowl; set aside. In a separate medium bowl, cream sugar, peanut butter, and butter with an electric mixer for 2 minutes. Mix in the egg, whipping cream, and vanilla. Gradually mix in the flour mixture on low speed until well combined. Fold in the peanuts.
  • Roll the dough into small 3/4-inch balls and drop one into each muffin cup.
  • After baking for 12 minutes, gently press one peanut butter cup into the center of each cookie. Return to the oven and bake for an additional 2 minutes. Once done, allow the cookies to cool in the pan on a cooling rack.
