Peanut Butter Cookies with Truvia® Baking Blend

Deliciously soft peanut butter cookies made with Truvia® Baking Blend for a lighter, sweet treat with 70% less sugar.
Ingredients:
  • 0.75 cup Truvia® Baking Blend
  • 1 cup peanut butter
  • 3 tablespoons shortening
  • 3 tablespoons unsalted butter plus
  • 2 teaspoons unsalted butter
  • 0.5 teaspoon vanilla extract
  • 2 cups all-purpose flour, sifted
  • 0.75 teaspoon baking soda
Instructions:
  • Preheat your oven to 375°F.
  • In a large bowl, blend Truvia® Baking Blend, peanut butter, shortening, butter, egg, and vanilla on low speed until mixed.
  • Combine flour, baking soda, and salt in a separate bowl. Gradually incorporate into the larger bowl and mix until well combined.
  • Form the dough into 1 1/4 inch balls, gently pressing down on the top and bottom to slightly flatten.
  • Arrange cookies on a parchment-lined or ungreased cookie sheet, spacing them 3 inches apart.
  • Create an intricate crisscross pattern on each cookie using a fork.
  • Bake until golden brown, about 12-14 minutes.
  • Let cookies rest on pan for 5 minutes, then transfer to wire rack to cool completely.
