Peanut butter cookies with a sweet cinnamon sugar coating - a delicious twist on classic snickerdoodles.
Ingredients:
  • 1.25 cups peanut butter
  • 0.5 cup unsalted butter
  • 0.5 cup shortening
  • 2 teaspoons cream of tartar
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons baking soda
  • 0.25 cup white sugar, or to taste
  • 2 teaspoons ground cinnamon, or to taste
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake!
  • In a large bowl, mix together peanut butter, 1 cup of white sugar, brown sugar, butter, and shortening until creamy using an electric mixer. Stir in vanilla extract and beat in eggs.
  • Whisk together flour, cream of tartar, 1 1/2 teaspoons cinnamon, baking soda, baking powder, and salt in a separate bowl. Gently incorporate into the egg mixture until fully combined.
  • Combine 1/4 cup sugar and 2 teaspoons cinnamon in a shallow bowl. Shape dough into 1-inch balls, coat with cinnamon-sugar mixture, and place on a baking sheet. Gently press each ball flat using a glass or fork.
  • Bake in the oven until lightly golden, around 8 minutes. Avoid overbaking. Cool on a wire rack.
