Easy and delicious peanut butter cookies that stay soft. Elevate them by pressing five peanut halves on top before baking.
Ingredients:
  • 1.25 cups sifted all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.5 cup butter
  • 0.5 cup peanut butter
  • 0.5 cup packed brown sugar
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 0.5 cup white sugar for rolling
Instructions:
  • Heat your oven to 375 degrees F (190 degrees C).
  • Combine flour, baking soda, and salt in a medium bowl, then set aside.
  • In a large bowl, smoothly blend together butter, peanut butter, 1/2 cup white sugar, and brown sugar. Mix in the egg and vanilla, then gradually combine with the flour mixture until smooth.
  • Roll the dough into 1-inch balls and coat them with 1/2 cup of white sugar. Arrange the balls 2 inches apart on ungreased cookie sheets. Press down on each ball with a fork twice to create a crisscross pattern.
  • Bake in the preheated oven for 10 to 12 minutes until edges are set. Let the cookies cool slightly, then transfer them to a wire rack to cool completely.
