Classic crosshatch peanut butter cookies: Kitchen-tested, unbeatable taste, tender and light with a satisfying chew. Perfectly balanced peanut butter richness. Ideal for potlucks, parties, picnics, lunchboxes, or holiday gatherings. You can't beat a classic!
Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/4 cup butter, softened
  • 1 egg
  • 1 1/4 cups Gold Medal™ All Purpose Flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Instructions:
  • Combine the sugars, peanut butter, shortening, butter, and egg in a large bowl for a perfectly balanced and delicious cookie dough.
  • Incorporate the rest of the ingredients gently to maintain the dough's light and fluffy texture. It's best to measure flour by stirring it, spooning it into the measuring cup, filling it to heaping, and using a flat edge to remove excess. Avoid overmixing to prevent tough cookies.
  • Chill in the refrigerator for approximately 2 hours until firm.
  • Preheat oven to 375°F.
  • Roll the dough into 1 1/4-inch balls and space them about 3 inches apart on an ungreased cookie sheet, or use parchment paper for easy cleanup.
  • Press down firmly with a fork dipped in sugar to create a decorative crisscross pattern.
  • Bake until light golden brown, about 9 to 10 minutes.
  • Allow to cool for 5 minutes, then transfer from the cookie sheet to a wire rack to cool fully. After the cookies have cooled completely, store them in an airtight container at room temperature for up to 5 days.
