Ultimate peanut butter cookies - made with premium peanut butter and the perfect blend of sugars for a gooey, irresistible dessert.
Ingredients:
  • 1/2 cup (112 g) butter, unsalted or salted, room temperature
  • 1/2 cup (100 g) white granulated sugar
  • 1/2 cup (110 g) packed brown sugar (light or dark)
  • 1/2 cup (130 g) peanut butter
  • 1 large egg
  • 1 1/4 cups (160 g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt (if using salted butter, omit the salt)
Instructions:
  • Prepare the cookie dough: Cream the butter for 2 minutes until smooth. Add brown sugar and white sugar, beat for an additional 2 minutes. Incorporate peanut butter and egg. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Combine dry ingredients with the butter-sugar mixture.
  • Chill the dough: Cover the dough with plastic wrap and let it chill in the refrigerator for at least 3 hours.
  • Preheat your oven to a toasty 375°F (190°C).
  • Form the cookies: Roll the dough into 1 1/4 inch balls and space them 3 inches apart on ungreased cookie sheets. Flatten each ball with a fork in a crisscross pattern, dipping the fork in sugar to prevent sticking.
  • To bake the cookies, place one sheet at a time on the center rack at 375°F (190°C) until lightly browned, for around 9 to 11 minutes. Take the cookies out of the oven and allow them to cool on the baking sheets for a minute. Then, move the cookies to a rack to cool thoroughly.
