Decadent peanut butter ice cream cookies with chocolate fudge and chips - a truly indulgent treat!
Ingredients:
  • 250g packet chocolate chip cookies (see note)
  • 40.00 ml unsalted peanuts
  • 50g butter, melted
  • 1 litre chocolate ice-cream, softened
  • 171.60 gm crunchy peanut butter
  • 200g dark chocolate, chopped
  • 126.25 gm pure cream
  • 20g butter
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Blend biscuits and peanuts until they reach a fine breadcrumb texture. Then, add butter and blend until fully combined.
  • Press the mixture evenly onto the base and sides of a 3.5cm-deep, 24cm loose-based round flan tin. Bake for 10 minutes or until the base turns a light golden color. Allow it to cool before proceeding.
  • In a large bowl, mix together ice cream and peanut butter until well combined. Transfer the mixture to the prepared pan and freeze until solid.
  • Create a decadent sauce by combining chocolate, cream, and butter in a saucepan over gentle heat. Stir continuously for 3 to 4 minutes until velvety. Drizzle over your pie before serving.
