Soft peanut butter cookies with a unique spicy twist.
Ingredients:
  • 0.25 cup butter, softened
  • 0.25 cup peanut butter
  • 0.5 cup white sugar
  • 0.25 cup honey
  • 0.25 cup unsulfured molasses
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1.3333300352097 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.75 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and grease the cookie sheets.
  • In a medium bowl, mix together butter, peanut butter, and 1/2 cup sugar until smooth. Add honey, molasses, egg, and vanilla. In a separate bowl, combine flour, baking powder, baking soda, salt, nutmeg, cinnamon, and ginger. Gradually mix dry ingredients into the molasses mixture until well combined. Shape dough into walnut-sized balls, then coat them in the remaining 1/2 cup sugar. Place cookies 2 inches apart on cookie sheets. Use a fork to press a criss-cross pattern on top of each cookie.
  • Bake in the preheated oven for 8 to 10 minutes, then cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
