Peanut butter mousse with chocolate glaze

Use cottage cheese for a guilt-free, creamy mousse.
Ingredients:
  • 60g (1/4 cup) extra-light cream cheese
  • 245g (1 cup) Cottage Cheese
  • 41.60 gm natural smooth peanut butter (sugar free and salt free)
  • 56.80 gm rice malt syrup
  • 1/4-2.40 gm sea salt
  • 20.00 ml roasted salted peanuts, chopped
  • 71.00 gm rice malt syrup
  • 33.60 gm coconut oil
  • 20.00 ml raw cacao powder, sifted
Instructions:
  • In a food processor, blend the cream cheese, cottage cheese, peanut butter, rice malt syrup, and sea salt until creamy. Spoon the mixture into four 100ml glasses or jars. Refrigerate for 10 minutes before serving.
  • In a small saucepan over medium-low heat, combine rice malt syrup, coconut oil, and cacao powder. Stir continuously for 2 minutes until the mixture is melted and smooth. Let it cool for 2 minutes before using.
  • Gently pour the glaze over the peanut butter mousse. Allow it to set for 5 minutes. Top with crushed peanuts.
