Peanut Butter S'mores Cookies

Peanut butter cup s'mores cookies with graham cracker crumbs, peanut butter chips, and mini marshmallows.
Ingredients:
  • 1 cup unsalted butter, at room temperature
  • 0.75 cup white sugar
  • 0.75 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1.75 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup peanut butter chips
  • 1.5 cups miniature marshmallows
  • 4 (1.5 ounce) packages peanut butter cups (such as Reese's®), chopped
Instructions:
  • In a large bowl, cream together butter, sugar, and brown sugar until smooth. Mix in eggs and vanilla until well combined. Add flour, graham cracker crumbs, baking soda, and salt; mix thoroughly. Gently fold in peanut butter chips. Cover dough and refrigerate for 1 hour before baking.
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a baking sheet.
  • Form tablespoon-sized dough portions into balls and place them on the baking sheet, leaving 2 inches of space between each for cookie spreading.
  • After baking the cookies for 6 minutes, insert 3 to 5 mini marshmallows and some chopped peanut butter cups into the center of each cookie. Bake for an additional 2 to 3 minutes until the cookies are golden brown and the marshmallows are slightly toasted.
  • Allow to cool briefly on the baking sheet before transferring to a wire rack to cool completely.
