Bottom-of-the-Cookie-Jar Peanut Butter-Marshmallow-Graham Bars

Transform cookie leftovers into scrumptious s'mores bars!
Ingredients:
  • 6 tablespoons salted butter
  • 1 cup creamy peanut butter
  • 6 cups mini marshmallows
  • 3 cups Golden Grahams™ cereal
  • 2 cups of your favorite cookies, chopped (I used peanut butter sandwich cookies, creme-filled chocolate sandwich cookies, chocolate chip cookies and peanut butter-stuffed pretzels)
  • 1 1/2 cups semisweet chocolate chips
Instructions:
  • Prepare a 13x9-inch (3-quart) baking dish by greasing it or lining it with cooking parchment paper.
  • In a large heavy-bottomed pan, melt butter, peanut butter, and marshmallows over medium-low heat, stirring often until smooth and combined.
  • After taking it off the heat, gently fold in cereal and cookie crumbs. Transfer the mixture into a baking dish and evenly spread it out.
  • In a medium microwavable bowl, melt the chocolate chips in 30-second intervals on High, stirring after each, until smooth. Drizzle the melted chocolate over the bars, cover, and refrigerate for 1 hour.
  • Slice into 18 squares and store covered at room temperature or in the fridge.
