Peanut Butter Sandwich Chippers

Indulge in peanut butter and chocolate chip sandwich cookies made with refrigerated dough for a sweet treat anytime.
Ingredients:
  • 1 roll (16.5 oz) refrigerated peanut butter cookie dough
  • 1/4 cup quick-cooking oats
  • 1/4 cup miniature chocolate chips
  • 3/4 cup peanut butter
  • 1/3 cup powdered sugar
  • 1/3 cup milk
Instructions:
  • Preheat the oven to 350°F. In a large bowl, crumble the cookie dough and mix in oats and chocolate chips. Divide the dough in half and chill the unused portion in the refrigerator.
  • Scoop dough using a slightly rounded measuring teaspoon and place 1 inch apart on ungreased cookie sheets. Continue with the rest of the dough.
  • Bake for 7 to 10 minutes until the edges turn a light golden brown. Allow to cool for 1 minute, then transfer from the cookie sheets. Let them cool completely, approximately 10 minutes.
  • In a small bowl, combine the rest of the ingredients until thoroughly mixed.
  • Take a cookie and spread 1 teaspoon of peanut butter mixture on the bottom. Place a second cookie on top, bottom side down, and press gently. Allow to set for about 30 minutes until the filling is firm. Store in a loosely covered container.
