Peanut Butter Sandwich Cookies

Indulge in decadent peanut butter sandwich cookies with creamy chocolate frosting.
Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/4 cup butter or margarine, softened
  • 1 egg
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting or about 1 cup jam
Instructions:
  • In a large bowl, combine sugars, peanut butter, shortening, butter, and egg. Use an electric mixer on medium speed or mix with a spoon until well combined. Add flour, baking soda, baking powder, and salt. Cover and refrigerate for approximately 3 hours until firm.
  • Preheat the oven to 375°F. Roll the dough into 1 1/4-inch balls and place them on an ungreased cookie sheet about 3 inches apart. Gently flatten the balls in a crisscross pattern using a fork dipped in flour.
  • Bake for 9 to 10 minutes until golden brown. Allow to cool for 2 minutes, then transfer to a cooling rack to cool completely for about 30 minutes. Spread chocolate frosting between pairs of cookies and enjoy.
