Indulgent and irresistibly addictive cookies. Store in an airtight container with bread to keep them fresh. Add a splash of milk for perfect filling.
Ingredients:
  • 1 cup peanut butter
  • 1 cup butter flavored shortening
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 0.5 cup creamy peanut butter
  • 3 cups confectioners' sugar
  • 5 tablespoons milk
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Cream together 1 cup of creamy peanut butter, shortening, white and brown sugars in a large mixing bowl. Add vanilla, then beat in eggs one at a time. In a separate bowl, mix flour, baking soda, and salt, then gradually combine with the creamy mixture.
  • Roll the mixture into 1-inch balls and arrange them on an ungreased cookie sheet, leaving 2 inches between each ball. Gently press down on each ball with a fork to flatten.
  • Bake until golden brown, approximately 7-8 minutes. Cool on wire racks.
  • For the filling: Mix 1/2 cup creamy peanut butter with confectioners' sugar, vanilla extract, and milk in a small bowl until smooth and creamy. Spread the frosting on one cookie and sandwich it with another.
