Indulge in a decadent homemade chocolate peanut butter brownie that brings back the nostalgia of childhood boxed mixes.
Ingredients:
  • 6 ounces semisweet chocolate chips
  • 8 tablespoons (1 stick, 4 ounces) unsalted butter
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1 tablespoon instant espresso coffee powder
  • 1 teaspoon vanilla extract
  • 2/3 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup smooth peanut butter
  • 2 tablespoons powdered sugar
Instructions:
  • Preheat the oven to 350˚F and prepare an 8-inch square baking dish by lining it with parchment paper.
  • Create a double boiler by placing the chocolate and butter in a heat-proof bowl over simmering water, ensuring the bottom of the bowl doesn't touch the water. Stir until the chocolate is melted, then remove from heat.
  • Prepare the batter by whisking eggs with both sugars, coffee powder, and vanilla extract. Combine flour, cocoa powder, salt, baking powder, and melted butter-chocolate mixture, stirring until evenly mixed. Press the thick batter into the baking dish evenly.
  • Create a peanut butter swirl: Microwave the peanut butter for 30 seconds until it's drizzle-consistency. Mix in the powdered sugar, then drizzle it over the brownie batter. Swirl the peanut butter mix gently with a butter knife into the batter, being careful not to overmix.
  • Bake the brownies in the oven for about 35 minutes, or until a toothpick inserted in the center comes out mostly clean. Don't worry if some peanut butter sticks to the toothpick. Let the brownies cool on a wire rack.
  • Allow the brownies to cool to room temperature before slicing. For cleaner cuts and less crumbs, briefly chill the pan in the freezer after cooling to make slicing easier and prevent sticking.
