Decadent hazelnut chocolate pudding topped with fresh pear slices and a luscious custard drizzle.
Ingredients:
  • 410g can pear halves, drained, chopped
  • 100g butter, at room temperature
  • 107.50 gm caster sugar
  • 100g dark chocolate, melted
  • 125.00 ml plain flour
  • 2.00 gm baking powder
  • 75.00 gm hazelnut meal
  • 125.00 ml fresh white breadcrumbs
  • 126.25 gm cream, whipped
  • 4 eggs
  • Warm custard, to serve
Instructions:
  • Preheat oven to 180°C (160°C fan). Grease 10 half-cup moulds, then distribute chopped pears evenly among them.
  • In a large bowl, use an electric mixer to cream together the butter and sugar until pale and creamy. Gradually add the eggs one at a time, making sure to beat well after each addition. Stir in the chocolate until smooth and evenly mixed.
  • Combine the sifted flour and baking powder with the chocolate mixture, hazelnut meal, and breadcrumbs. Mix everything until well combined, then gently fold in the whipped cream.
  • Take the puddings out of the pan and let them rest in the molds for 5 minutes before flipping them onto serving plates. Drizzle with custard before serving.
  • Carefully spoon the mixture into the moulds, making sure not to disturb the pear. Arrange the puddings in a large baking pan. Fill the pan with boiling water halfway up the sides. Cover securely with baking paper and foil. Bake for 35-40 minutes or until a skewer inserted comes out clean.
