Ingredients:
  • 40 g blanched hazelnuts
  • 1 x 410 g tin of pear halves in juice
  • 50 ml Armagnac
  • 50 g dark chocolate (70%)
  • 4 large scoops of vanilla ice cream
Instructions:
  • In a large non-stick frying pan over high heat, toast hazelnuts for 2 minutes until lightly golden, shaking the pan regularly. Transfer hazelnuts to a pestle and mortar. Return the pan to the heat and add pears with their juice. Once heated, pour in Armagnac and carefully ignite with a match. Let it flame, then simmer until thickened into a syrup. Crush hazelnuts and divide among four plates. Top with hot pears, cup side up. Remove pan from heat and stir in most of the chocolate until melted. Place a scoop of ice cream on each hazelnut pile and sprinkle with remaining chocolate. Combine chocolate syrup, drizzle into pear cups, and serve.
