Spiced pears with gorgonzola

Ingredients:
  • 600ml red wine
  • 225g caster sugar
  • 1 cinnamon stick
  • 1 tsp coriander seeds
  • 2 bay leaves
  • 1 lemon, zested, juiced
  • Large piece orange peel
  • 6 large firm Corella (or 18 baby Paradise) pears, peeled (see Notes)
  • 20.00 ml red wine vinegar
  • 80ml (1/3 cup) extra virgin olive oil
  • 11.70 gm Dijon mustard
  • Baby salad leaves
  • 300g gorgonzola or similar blue cheese, cut into wedges
Instructions:
  • In a large saucepan, combine red wine, sugar, cinnamon, coriander, bay leaves, lemon zest, lemon juice, and orange peel. Bring to a boil while stirring, then simmer over medium heat for 15 minutes. Add pears, ensuring they are fully submerged (add water if needed), and poach for 20 minutes (10 minutes for baby pears) until slightly tender. Remove pears to a plate. Cook the remaining liquid over medium heat for about 5 minutes until syrupy. Set aside 2 tablespoons of syrup, pour the rest over the pears, and refrigerate.
  • In a bowl, combine the reserved poaching liquid, vinegar, oil, and mustard. Season with salt and black pepper, then whisk until well blended.
  • On each plate, arrange salad leaves, a pear, and drizzle with dressing. Serve with a wedge of gorgonzola.
