Indulgent baked pears with spiced mascarpone - a luxurious post-dinner treat!
Ingredients:
  • 8 large buerre bosc pears
  • 1 vanilla bean, halved lengthways
  • 80g butter
  • 45.00 gm firmly packed brown sugar
  • 393.75 gm apple juice
  • 250g mascarpone cheese
  • 18.00 gm icing sugar mixture
  • 1 tsp finely grated orange rind
  • 1.25 gm mixed spice
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Make shallow cuts in the pear skins with a small sharp knife, then arrange them in a medium baking dish.
  • 1 vanilla bean Scrape the flavorful seeds from the vanilla bean and set the bean aside. Combine the vanilla seeds, butter, and sugar in a saucepan over gentle heat. Cook and stir for 2 minutes until the sugar is fully dissolved. Gently place the reserved vanilla bean in the baking dish.
  • Coat pears in butter mixture, then pour in remaining juice and butter mixture. Bake for 1 hour until pears are tender. Allow to rest for 15 minutes before removing bean.
  • For the Spiced mascarpone: Combine mascarpone, sugar, orange rind, and mixed spice in a bowl. Mix well. Serve on plates with pears and drizzle with pan juices. Enjoy!
