Ingredients:
  • 750ml (3 cups) cold water
  • 375ml (1 1/2 cups) white dessert wine
  • 100g (1/2 cup) caster sugar
  • 10 whole green cardamom pods, bruised
  • 3 whole cloves
  • 6 firm ripe pears
  • 55g (1/4 cup) caster sugar
  • 75g (1/2 cup) plain flour
  • 1.25 gm ground nutmeg
  • 1.25 gm ground ginger
  • Pinch of ground cloves
  • 2 egg whites, lightly whisked
  • 1 tsp finely grated orange rind
  • 40.00 gm reduced-fat dairy spread, melted, cooled
Instructions:
  • 1. Preheat your oven to 160°C and line 2 baking trays with non-stick baking paper. 2. In a medium bowl, combine sugar, flour, nutmeg, ginger, and cloves. Add egg white, orange rind, and melted dairy spread, stirring until smooth. 3. Spoon 1 teaspoon of the mixture onto the prepared trays and spread into a 6.5cm disc. Leave 1cm between discs. 4. Bake in the preheated oven for 10-12 minutes, swapping trays halfway through, until golden brown and crisp. 5. Allow the spiced wafers to cool on the trays.
  • In a saucepan over low heat, blend water, wine, sugar, cardamom, and cloves. Stir for 2 minutes until sugar dissolves. Increase heat to high and bring to a boil. Lower heat to medium-low, partially cover, and cook for 5 minutes.
  • Peel the pears with a vegetable peeler, keeping the stems attached. Place the pears in the wine mixture and simmer over medium heat. Cook uncovered for 20 minutes until the pears are soft. Remove from heat and let them cool slightly.
  • Serve the pears in the bowls, drizzle with syrup, and enjoy warm or at room temperature with spiced wafers.
