Elevate your baking with this aromatic sweet spice!
Ingredients:
  • 4 large packham pears
  • 107.50 gm caster sugar
  • 1 cinnamon stick
  • 100g butter, chilled, finely chopped
  • 250.00 gm boiling water
  • 49.50 gm self-raising flour
  • 82.50 ml plain flour
  • 45.00 gm brown sugar
  • Vanilla custard, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Halve the pears, ensuring to remove the core while keeping the stems intact.
  • In a large ovenproof dish, mix caster sugar, cinnamon, 25g butter, and boiling water. Add pears and coat them well. Arrange pears cut-side up. Bake for 15 to 20 minutes until just tender. Set aside 1/2 cup liquid. Remove and discard the remaining liquid and cinnamon stick before serving.
  • In a bowl, mix together the flours and brown sugar. Add the remaining butter and rub it in until well combined. Press the mixture on top of each pear half. Bake for 20 minutes or until the crumble is crisp and the pears are tender. Serve with custard and reserved liquid.
