Delicious pear pie made with sliced pears in lemon-cinnamon sugar filling, baked in a flaky crust.
Ingredients:
  • 1 (14.1 ounce) package double-crust pie pastry, thawed
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon zest
  • 0.25 teaspoon salt
  • 5 cups peeled and sliced pears
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C) and place a baking sheet on the bottom rack. Line a 9-inch pie plate with one pie crust, leaving the second crust aside for now.
  • In a mixing bowl, blend together sugar, flour, cinnamon, lemon zest, and salt.
  • Layer pear slices in the pie crust, generously sprinkle the sugar mixture over each layer. Add dollops of butter and finish with a sprinkle of fresh lemon juice.
  • Dampen the edge of the bottom crust with water. Place remaining pie crust over the filling, crimp edges to seal, trim excess pastry, and make a few slits in the top crust for steam to escape.
  • Preheat the oven and bake on the baking sheet for 10 minutes. Lower the oven temperature to 350°F (175°C) and continue baking until the crust is golden brown and the filling is bubbly, for 35 to 40 minutes. Let it cool for several hours before serving.
