Pears with custard & cinnamon oat crumble

Pears bathed in creamy custard create an indulgent crumble.
Ingredients:
  • 20.00 gm custard powder
  • 3 egg yolks
  • 2.20 gm vanilla extract
  • 40g (1/4 cup) plain flour
  • 500ml (2 cups) milk
  • 70g (1/3 cup) caster sugar
  • 50g (1/2 cup) rolled oats
  • 45g (1/4 cup, lightly packed) brown sugar
  • 40g butter, melted
  • 1.25 gm ground cinnamon
  • 1 x 410g can pear halves, drained, coarsely chopped
Instructions:
  • Preheat your oven to 200°C. In a saucepan, smoothly blend custard powder, egg yolks, vanilla, and 2 tablespoons of flour. Whisk in 125ml (1/2 cup) of milk using a balloon whisk.
  • Combine the caster sugar and remaining milk in a pan over medium heat. Stir with a wooden spoon until the custard boils and thickens.
  • Mix together the oats, brown sugar, butter, cinnamon, and remaining flour in a bowl.
  • Divide juicy pears between six cozy 250ml (1-cup) ovenproof dishes. Spoon the heavenly custard on top. Sprinkle with the delicious oat mixture. Pop them on a baking tray and bake for 15 minutes until the crumble turns a beautiful golden brown. Let them sit for 5 minutes to cool slightly before indulging.
