Spiced poached pears with warm chocolate sauce

Poached pears with a spicy clove and port wine glaze, drizzled with a decadent boozy chocolate sauce.
Ingredients:
  • 1L (4 cups) water
  • 125ml (1/2 cup) apple juice
  • 60ml (1/4 cup) port
  • 60g (1/4 cup) low GI cane sugar
  • 12 whole cloves
  • 15g piece fresh ginger, peeled, sliced
  • 2 cinnamon sticks
  • 4 firm pears, peeled
  • 40.00 ml port
  • 40.00 ml raw cacao powder
  • 18.00 gm low-GI cane sugar
Instructions:
  • In a saucepan, combine water, apple juice, port, sugar, cloves, ginger, and cinnamon over medium-high heat. Stir and cook for 2 minutes until the sugar dissolves. Bring to a boil, then lower the heat to a simmer.
  • Place the pears in the pot and cover them with a round piece of baking paper. Simmer with the lid on, turning occasionally, for 40-50 minutes or until the pears are tender. Let them cool completely in the poaching liquid before serving.
  • For the chocolate sauce, transfer 310ml (1 1/4 cups) of the poaching liquid to a jug. Stir in the port. Combine cacao powder and sugar in a small saucepan. Gradually whisk in the poaching liquid mixture until smooth. Bring to a boil over medium-high heat, stirring constantly. Reduce heat to low and simmer for 12-14 minutes, stirring occasionally, until thick and syrupy. Let cool slightly for 10 minutes before using.
  • Serve the poached pears in bowls and generously drizzle with warm chocolate sauce.
