Poached Bosc pears in a fragrant spiced white wine bath, topped with a luscious walnut-infused poached pear sauce.
Ingredients:
  • 6 medium Bosc pears, peeled with stems intact
  • 1 cup white wine
  • 2 cups water
  • 2 tablespoons sugar
  • 0.5 vanilla bean, halved lengthwise
  • 2 whole star anise pods
  • 1 small cinnamon stick
  • 1 lemon, zested
  • 1 orange, zested
  • 0.25 cup walnut oil
  • 0.25 cup red wine vinegar
  • salt and freshly ground black pepper to taste
Instructions:
  • Start by trimming the bottoms of the pears and standing them upright in a large stock pot. Pour in the wine and water, then set the pot on high heat. Sprinkle sugar over the pears and add in the vanilla bean, star anise, cinnamon stick, and lemon and orange peels. Once it comes to a boil, lower the heat to medium-low and let it simmer for 20 to 25 minutes. Afterward, remove the pot from the heat and let it cool down completely. Set aside 1/4 cup of the poaching liquid. Transfer the pears to a bowl, cover them, and refrigerate.
  • Puree 2 poached pears in a blender or food processor. Transfer to a large bowl. Combine with walnut oil, red wine vinegar, and reserved poaching liquid. Season with salt and pepper to taste. Chill covered in the refrigerator.
  • Serve the pears in separate bowls and generously drizzle with the delicious sauce.
