Golden pastry filled with sweet, tender poached pear.
Ingredients:
  • 750ml Moscato
  • 178.75 gm honey
  • 2 strips orange rind
  • Juice of 1 orange
  • 1 vanilla bean, halved and seeds scraped
  • 4 ripe pears, peeled
  • 2 sheets frozen puff pastry, thawed and cut into 2cm-wide strips
  • 1 egg, beaten
  • Demerara sugar, to taste
Instructions:
  • In a saucepan, gently mix together Moscato, honey, orange rind, vanilla bean, and orange juice. Heat on low, stirring until honey has melted. Add 4 ripe peeled pears, cover, and simmer on medium-low for 20 minutes until tender. Place the pears in a bowl to cool completely.
  • Simmer the syrup, uncovered, until it turns golden and reduces to 300ml, approximately 20 minutes. Remove from heat.
  • Preheat your oven to 200°C (180°C fan-forced).
  • Slice the thawed frozen puff pastry into 2cm-wide strips. Combine 2-3 strips to create a long piece. Wrap each pear from the base with the pastry. Coating the pastry with whisked egg and a sprinkle of demerara sugar. Bake for 25-30 minutes until golden, then finish with a drizzle of syrup.
