Elevate classic sponge pudding with sweet pears and zesty oranges.
Ingredients:
  • 3 eggs, separated
  • 215.00 gm caster sugar
  • 257.50 gm low-fat milk
  • 75.00 gm self-raising flour, sifted
  • 65.63 gm orange juice
  • 2 tsp grated orange zest
  • 4 pears, cored, cut into eighths
  • Whipped cream, to serve
Instructions:
  • Preheat the oven to 180C and lightly spray a 24cm dish or 6 x 1 1/4-cup ramekins with oil for a perfect start to your dish.
  • In a small bowl, whip egg yolks and half the sugar with an electric mixer until mixture is thick and creamy. Transfer to a large bowl and mix in milk, flour, orange juice, and zest.
  • In a small, clean bowl, use an electric mixer to beat egg whites until soft peaks form. Gradually add the rest of the sugar, beating until thick and glossy. Gently fold in the orange mixture.
  • Spread out the pear pieces in the dish, then pour the mixture over the top before placing the dish in a large baking pan.
  • Fill the dish or ramekins halfway up with freshly boiled water. Bake for 35-40 minutes until golden brown and firm. Enjoy with a dollop of cream on top.
