Elevate your lunchbox with gourmet roast beef rolls, sweet pears, and creamy Camembert cheese.
Ingredients:
  • 8 par-baked dinner rolls
  • 40g baby rocket
  • 1/2 small red onion, thinly sliced
  • 120g shaved rare roast beef
  • 21.00 gm lemon juice
  • 9.20 gm olive oil
  • 5.90 gm dijon mustard
  • 1/2 beurre bosc pear
  • 100g camembert cheese
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced. Arrange rolls on a baking tray and bake for 5 minutes or until they turn golden. Let cool, then store in a snap-lock bag or airtight container.
  • Chill arugula, onion, and roast beef each in their own sealed bags in the refrigerator.
  • In a screw-top jar, mix juice, oil, and mustard. Season with salt and pepper, then refrigerate after securing the lid.
  • To prepare: Slice rolls horizontally (making sure not to slice through completely). Thinly slice pear and cheese. Toss rocket, onion, pear, and lemon juice in a bowl. Fill rolls with beef, cheese, and rocket mixture.
