Roast chicken with sweet pears and crunchy walnuts for a delicious twist.
Ingredients:
  • 1 (about 1.6kg) whole free-range chicken
  • 1 slice rye bread, cut into 1cm pieces
  • 1 William pear or Packham pear, halved, cored, cut into 1cm pieces
  • 1 small red onion, finely chopped
  • 30g (1/4 cup) walnut halves, coarsely chopped
  • 20.00 ml chopped fresh sage
  • 1 egg, lightly whisked
  • 60g butter, at room temperature
  • 8 fresh sage leaves
  • 0.63 gm ground cinnamon
  • Mashed potato, to serve
  • Brussels Sprouts, to serve
Instructions:
  • Thoroughly wash the chicken inside and out with cold running water, then dry it with paper towels.
  • Mix bread, sweet pear, fragrant onion, crunchy walnut, flavorful sage, and egg in a bowl. Season generously with salt and pepper. Gently stuff into the cavity of the chicken.
  • Gently separate the chicken skin to form a pocket. Fill it with butter and sage. Secure the legs with kitchen string.
  • Preheat your oven to 180°C. Arrange the chicken, breast-side up, in a large roasting pan. Sprinkle with cinnamon and season with salt and pepper. Cover loosely with foil and roast for 1 hour.
  • Uncover the chicken and continue roasting for 30 minutes until the chicken is golden and the juices run clear when a skewer is inserted into the thigh. Let the chicken rest for 10 minutes covered with foil, then cut into pieces and serve with mashed potatoes and brussels sprouts.
