Pear with honey yoghurt dressing

Ingredients:
  • 45g (1/3 cup) walnut pieces
  • 80ml (1/3 cup) blue gum honey
  • 1 x 200g container 99.8 per cent fat-free natural yoghurt (Pauls brand)
  • 4 Josephine pears, halved, cored, thinly sliced lengthways
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with non-stick baking paper. Mix walnuts with 1 tablespoon of honey in a bowl. Spread on the lined tray. Bake for 5-7 minutes until caramelised. Allow to cool for 5 minutes before serving.
  • In a jug, mix the leftover honey with yogurt. Divide the pear slices among serving bowls, then drizzle with the honey yogurt dressing and sprinkle with walnuts.
