Elevate your non-alcoholic drink game with a refreshing pear-ginger shrub. Sweet, sour, and bursting with flavor - perfect alone or mixed with club soda.
Ingredients:
  • 2 pounds ripe pears (about 4 medium)
  • 1 1/2 cups (300g) sugar
  • 1-inch piece fresh ginger with skin, grated
  • 1 1/2 cups apple cider vinegar, with or without the “mother”
  • 3 to 4 ounces club soda, chilled, to serve
Instructions:
  • Dice the pears, keeping the skin on, into 1/2-inch pieces. No need to stress if a fiber or seed sneaks in; everything will be strained later.
  • Coat pears with sugar and ginger: Mix pears and sugar in a glass or plastic container, ensuring pears are evenly coated. Gently crush pears and add ginger. Cover with a tea towel and let sit in a cool, dark place for 48 hours, stirring twice.
  • After resting, delicately strain into a suitable container, ensuring it can hold 1 1/2 cups more. Add apple cider vinegar and gently mix.
  • Let the shrub mature: Seal the jar and refrigerate for 10 days until it's fully flavored. Enjoy for up to 6 months in the fridge.
  • To serve, mix 1 ounce of the Pear-Ginger Shrub with 3-4 ounces of cold club soda, stirring gently to blend.
