Create two mouthwatering desserts, perfect for now and later!
Ingredients:
  • 55 g unsalted butter softened, plus extra for greasing
  • 55 g self-raising flour
  • 55 g caster sugar
  • 1 large free-range egg
  • 1 piece of stem ginger in syrup
  • 1 orange
  • 1 ripe pear
  • golden syrup or reserved ginger syrup
Instructions:
  • To prepare the topping, cut out 2 greaseproof paper discs: Trace 2 teacups or ramekins on the paper, then cut out the circles just inside the line. Lightly butter one side of the discs and grease the inside of the teacups or ramekins. In a food processor, blend flour, sugar, butter, and egg to form a batter. Add chopped ginger and finely grated orange zest, pulse briefly. Dice the pear into 1cm chunks. Drizzle a bit of golden syrup or reserved ginger syrup in each cup, then layer half of the pear in each. Divide the batter between the cups, then cover with the buttered paper discs. Microwave on high power for 4 minutes until springy. Let cool briefly, then carefully unmold and serve with warm custard. Enjoy!
